The evening at the end of an amazing day will end with a memorable dinner in a Michelin starred restaurant at the foot of the hills of Monte Quarin, just outside Cormons. All dishes are a mix of local Trieste cuisine - jota and plum gnocchi, for example - but there is also a variety of Friulian dishes including frico, omelette and barley. The kitchen specializes in Slovenian noodles mlinci and zlikrofi, as well as game, roasted or grilled to perfection. The veal shank, sculpted at the table, simply melts in the mouth. This is authentic, traditionally cooked food that is refined to an exquisite level through added touches like fried sage leaves, elderflower syrup, and herbal sorbets.

The last day in the hilly area will include a second visit to a farm accompanied by a local guide who, through a splendid walk in the countryside among the vineyards, will take you to one of the best producers of white wine in the Collio Goriziano. You will taste some varieties of wine such as Ribolla Gialla, Friulano, Malvasia.
